- 1/2 cup butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe banana (about 2.5 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into powder)
- 1 teaspoon baking soda
- 1.5 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 cup sour cream
- Optional: nuts, cinnamon, nutmeg, cloves
Instructions
- Preheat your oven to 350°F and prepare a 9×5 inch loaf pan.
- Cream together softened butter and sugars until fluffy.
- Add eggs and vanilla; mix well.
- Mash bananas and stir them into the mixture.
- Combine dry ingredients: flour, oat powder, baking soda, baking powder, and salt.
- Mix dry ingredients into the wet mixture until just combined.
- Fold in sour cream and optional nuts/spices if desired.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick comes out clean.
- Cool on a rack before slicing.
