  • 1 1/4 cups cold unsalted butter, diced
  • 5 cups peeled, pitted, and chopped peaches (about 7 to 8 medium peaches, 2.5 lb)
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 6 tbsp heavy cream
  • 1/2 tsp vanilla extract (optional)
  • Reserved crumb mixture from crust
  • 1/4 cup packed brown sugar (preferably dark)

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, and salt. Cut in cold diced butter until crumbly. Reserve 1 cup of mixture.
  2. Press the remaining mixture into a greased 9×13-inch baking pan and bake for 15-20 minutes until lightly golden.
  3. Combine chopped peaches with sugar, flour, cinnamon, and salt in another bowl. Pour peach filling over baked crust and drizzle heavy cream on top.
  4. Sprinkle reserved crumb mixture with brown sugar over the peach layer and bake for an additional 40-45 minutes until bubbly and golden brown.
