Ingredients
- 2 1/2 cups all-purpose flour
- 2/3 cup granulated sugar
- 1/2 tsp salt
- 1 1/4 cups cold unsalted butter, diced
- 5 cups peeled, pitted, and chopped peaches (about 7 to 8 medium peaches, 2.5 lb)
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 6 tbsp heavy cream
- 1/2 tsp vanilla extract (optional)
- Reserved crumb mixture from crust
- 1/4 cup packed brown sugar (preferably dark)
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, and salt. Cut in cold diced butter until crumbly. Reserve 1 cup of mixture.
- Press the remaining mixture into a greased 9×13-inch baking pan and bake for 15-20 minutes until lightly golden.
- Combine chopped peaches with sugar, flour, cinnamon, and salt in another bowl. Pour peach filling over baked crust and drizzle heavy cream on top.
- Sprinkle reserved crumb mixture with brown sugar over the peach layer and bake for an additional 40-45 minutes until bubbly and golden brown.
- Allow to cool completely before slicing into bars.
