- 2 cups all-purpose flour

- 1 teaspoon baking powder
- 1 large egg
- ½ cup Greek yogurt
- 1½ cups fresh berries (blueberries and raspberries)
- 6 oz cream cheese
- 3 tablespoons granulated sugar
- ¼ teaspoon salt
- ¼ cup unsalted butter (melted)
- ¼ cup vegetable oil
- ½ teaspoon vanilla
- ¾ cup powdered sugar
- 1½ – 2½ teaspoons milk
Instructions
- Preheat your oven to 425°F (220°C) and line a muffin pan with liners.
- In a bowl, create the streusel topping by mixing flour, sugar, and melted butter until crumbly.
- For the cream cheese filling, blend softened cream cheese with sugar and vanilla until smooth.
- Combine dry ingredients in one bowl and wet ingredients (egg, yogurt, oil, vanilla) in another.
- Gently fold wet into dry ingredients, then incorporate half of the berries.
- Fill muffin liners with batter; add cream cheese filling and top with remaining berries.
- Sprinkle streusel topping on each muffin before baking for about 30-35 minutes at 350°F (175°C).
- Allow to cool slightly before serving.
