- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups plain flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard ovens. Grease and line a 9 x 5 inch loaf tin with baking paper.
- In a large mixing bowl, mash the overripe bananas well using a fork or potato masher. Add canola oil, milk, both sugars, eggs, and vanilla extract; stir until combined.
- Sift in the plain flour, baking powder, and salt. Gently mix until just combined—don’t worry about lumps!
- Pour the batter into the prepared loaf tin. Bake for 45-55 minutes or until golden brown; check doneness with a skewer—it should come out clean.
- Allow cooling in the tin for about 10 minutes before transferring to a wire rack to cool completely.
