Instructions
- In a large bowl, combine the rice vinegar, soy sauce (or tamari), honey (or maple syrup), grated ginger, and minced garlic. Whisk until well blended.
- Add the shredded carrots to the dressing and toss until evenly coated.
- Stir in the chopped cilantro and toasted sesame seeds.
- If desired, sprinkle with red chili flakes or chopped peanuts for added heat and crunch.
- Let the salad sit for 5β10 minutes to allow the flavors to meld before serving.
