  • 0.25 cup brown sugar
  • 0.5 cup flour
  • 0.25 cup cold butter

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the muffin tin by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, granulated sugar, and cinnamon.
  3. In another bowl, combine the milk, vegetable oil, egg, and vanilla extract. Stir in the apple butter.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. For the swirl topping, mix brown sugar, flour, and cinnamon in a small bowl and cut in cold butter until crumbly.
  6. Fill muffin cups halfway with batter, sprinkle with swirl topping, then add more batter on top and swirl if desired.
  7. Bake for about 22 minutes or until a toothpick comes out clean.
  8. Cool briefly in the pan before transferring to a wire rack.
