- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 0.5 teaspoon salt
- 0.75 cup granulated sugar
- 1 teaspoon cinnamon
- 1 cup milk
- 0.5 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 0.5 cup apple butter
- 0.25 cup brown sugar
- 0.5 cup flour
- 0.25 cup cold butter
Instructions
- Preheat your oven to 350°F (175°C). Prepare the muffin tin by greasing it or lining it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, granulated sugar, and cinnamon.
- In another bowl, combine the milk, vegetable oil, egg, and vanilla extract. Stir in the apple butter.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- For the swirl topping, mix brown sugar, flour, and cinnamon in a small bowl and cut in cold butter until crumbly.
- Fill muffin cups halfway with batter, sprinkle with swirl topping, then add more batter on top and swirl if desired.
- Bake for about 22 minutes or until a toothpick comes out clean.
- Cool briefly in the pan before transferring to a wire rack.
