Ingredients
- 1 pound boneless, skinless chicken breasts or thighs
- 1/2 cup cornstarch
- 1/2 cup orange marmalade
- 1/4 cup soy sauce (use tamari for gluten-free)
- 2 tablespoons cooking oil (vegetable or canola)
Instructions
- Cut the chicken into bite-sized pieces and coat evenly with cornstarch in a mixing bowl.
- Heat cooking oil in a frying pan over medium-high heat. Add the coated chicken pieces.
- Cook for about 5 minutes until golden brown, flipping occasionally until cooked through.
- Reduce heat to medium-low, then pour in orange marmalade and soy sauce. Stir well and simmer for an additional 2–3 minutes until heated through.
- Serve hot over rice or with your favorite side dishes.
