  • 1 zucchini (spiralized)
  • 1 egg
  • 1 avocado (sliced)
  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • Salt
  • Pepper
  • Chili flakes
  • Parsley
  • Lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C). Season the salmon fillet with salt, pepper, and lemon juice. Bake for 12-15 minutes until flaky.
  2. In a skillet over medium heat, add olive oil and sauté the spiralized zucchini for 2-3 minutes until just tender. Season with salt, chili flakes, and parsley.
  3. In another skillet or the same one after removing the zoodles, fry the egg sunny-side up until whites are set but yolk remains runny.
  4. Sauté cherry tomatoes until blistered.
  5. Assemble your plate by layering zoodles as the base, topping with flaked salmon, sunny-side-up egg, charred tomatoes, and sliced avocado.
