  • 1 teaspoon vanilla bean paste

  • 3 large eggs
  • ½ cup sour cream
  • 1 teaspoon lemon juice
  • ¼ cup unsalted butter, browned

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan or line it with parchment paper.
  2. For the crust, mix graham cracker crumbs, sugar, salt, and melted butter until crumbly. Press into the pan and refrigerate.
  3. In a large bowl, beat softened cream cheese until smooth. Add sugar and flour; mix well. Incorporate vanilla bean paste and extract.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream and lemon juice.
  5. Prepare brown butter by melting unsalted butter until golden brown; let cool slightly before adding to the batter.
  6. Pour filling into the crust and bake for 55–60 minutes until edges are set but center jiggles slightly.
  7. Cool gradually in the oven with the door ajar for an hour. Chill in the fridge for at least four hours before serving.
