- 8 eggroll wrappers
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 jalapeño peppers, seeded and finely chopped
- 1 green onion, finely chopped
- 1/2 teaspoon garlic powder
- Vegetable oil for frying
Instructions
- Prepare the Filling: In a mixing bowl, combine softened cream cheese, cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper until well blended.
- Assemble the Eggrolls: Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal edges with water.
- Heat the Oil: In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).
- Fry the Eggrolls: Carefully place the eggrolls seam side down into hot oil. Fry for about 3-4 minutes until golden brown.
- Drain and Serve: Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
