  • 4-5 tbsp curry powder
  • ½ cup green seasoning
  • 2 tbsp adobo seasoning
  • 1/2 Scotch bonnet pepper
  • 2 medium potatoes (cubed)
  • ¼ cup chopped onion
  • ¼ cup chopped sweet pepper
  • 3 stems thyme

Instructions

  1. Rinse goat meat in vinegar and water; soak for 15 minutes, then rinse.
  2. In a bowl, mix dry seasonings and rub onto the meat thoroughly.
  3. Marinate overnight in the fridge.
  4. Allow marinated meat to sit at room temperature for 10-15 minutes before cooking.
  5. Heat water in a large pot over medium heat; add crushed garlic and curry powder.
  6. Add goat meat to sear until browned on all sides.
  7. Pour in water from the seasoning bowl and add vegetables along with the Scotch bonnet pepper.
  8. Cover and simmer for 2-3 hours, checking periodically to add water as needed.
  9. Once tender, stir in cubed potatoes and season again if necessary.
  10. Boil for an additional 15 minutes until potatoes are cooked through.
