Ingredients
- 3 lbs goat meat
- 4-5 tbsp curry powder
- ½ cup green seasoning
- 2 tbsp adobo seasoning
- 1/2 Scotch bonnet pepper
- 2 medium potatoes (cubed)
- ¼ cup chopped onion
- ¼ cup chopped sweet pepper
- 3 stems thyme
Instructions
- Rinse goat meat in vinegar and water; soak for 15 minutes, then rinse.
- In a bowl, mix dry seasonings and rub onto the meat thoroughly.
- Marinate overnight in the fridge.
- Allow marinated meat to sit at room temperature for 10-15 minutes before cooking.
- Heat water in a large pot over medium heat; add crushed garlic and curry powder.
- Add goat meat to sear until browned on all sides.
- Pour in water from the seasoning bowl and add vegetables along with the Scotch bonnet pepper.
- Cover and simmer for 2-3 hours, checking periodically to add water as needed.
- Once tender, stir in cubed potatoes and season again if necessary.
- Boil for an additional 15 minutes until potatoes are cooked through.
