5 tablespoons unsalted butter (or coconut oil)
½ cup honey (or pure maple syrup)
1¾ cups mashed ripe bananas (about 3½ large or 5 medium bananas)
2 large eggs
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 teaspoon vanilla extract
2 cups (250 g) white whole wheat flour (or regular whole wheat or all-purpose flour)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, cream together the butter (or coconut oil) and honey (or maple syrup) until smooth.
- Stir in the mashed bananas and eggs until well combined. Add the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the banana mixture until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
