  • 1 8-ounce package Monterey Jack cheese, shredded
  • ½ cup mayonnaise
  • 1 tablespoon fresh sage, chopped small (or half that of dried sage)
  • 4 10-inch flour tortillas
  • 1 pound leftover turkey, sliced (white or dark or both)
  • 12 ounces leftover stuffing
  • ½ cup whole berry cranberry sauce
  • ½ cup whole berry cranberry sauce (for dipping)
  • 1 cup mayonnaise (for dipping)
  • 4 teaspoons fresh sage, chopped small (for dipping)

Instructions

  1. In a medium bowl, mix shredded Monterey Jack cheese, mayonnaise, and chopped fresh sage until well combined.
  2. Spread the cheese mixture over each tortilla. On one half of each tortilla, layer sliced leftover turkey, stuffing, and cranberry sauce. Fold the other half over to form a half-moon shape.
  3. In another bowl, combine whole berry cranberry sauce with mayonnaise and sage to create the dipping sauce.
  4. Heat a non-stick skillet over medium heat and cook each folded quesadilla for 1-2 minutes on each side until golden brown.
  5. Cut into halves and serve with dipping sauce.
