Instructions
- In a mixing bowl, combine shredded beef and mashed potatoes; add diced tomato, chopped onion, jalapeno, ground cumin, salt, and pepper. Mix well.
- Heat vegetable oil in a frying pan over medium heat.
- Take one tortilla, place a spoonful of filling in the center, fold it into a half-moon shape, and gently press to seal.
- Fry each taco in hot oil until golden brown on both sides (about 3–5 minutes per side).
- Drain excess oil on paper towels.
- Serve warm with your choice of toppings.
