- 2 medium sweet potatoes
- 8 oz brie cheese
- 1 cup cranberries (fresh or frozen)
- 1/2 cup chopped pecans
- 1 tbsp olive oil
- Salt and black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice sweet potatoes into 1/2-inch rounds and arrange them on the baking sheet. Brush with olive oil and season with salt and pepper.
- Bake for 15-18 minutes until tender and lightly browned.
- Top each round with a slice or crumble of brie, a few cranberries, and a sprinkle of pecans.
- Bake for an additional 5-7 minutes until the brie is melted and cranberries soften slightly.
- Serve warm and enjoy!
