Ingredients
- 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
- 4 cups kale, stems removed and chopped
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup Gruyère cheese, grated
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat oven to 375°F (190°C).
- Peel and thinly slice sweet potatoes using a knife or mandoline.
- Sauté chopped kale in a skillet with a splash of water or olive oil for about 5-7 minutes until wilted.
- Grease a 9×13 inch baking dish with olive oil.
- Layer sweet potato slices at the bottom, followed by sautéed kale, drizzled heavy cream, and sprinkled cheese. Repeat layers until all ingredients are used.
- Cover with foil and bake for 30 minutes; remove foil and bake an additional 20-25 minutes until golden brown.
- Let cool for about 10 minutes before serving.
