- 5 oz assorted salad greens
- 2 oranges, peeled and cut into sections
- 1 apple, thinly sliced
- 1/4 cup pomegranate arils
- 1/4 cup sweetened dried cranberries
- 1/3 cup crumbled feta cheese (or plant-based alternative)
- 1/4 cup toasted chopped pecan pieces
- 3 tbsp fresh orange juice
- 1 tbsp chicken sparkling grape juice vinegar
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1 tbsp finely minced shallot
- 1 1/2 tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Wash and dry the assorted salad greens thoroughly.
- In a large mixing bowl, combine salad greens, orange sections, apple slices, pomegranate arils, dried cranberries, crumbled feta cheese, and chopped pecans. Toss gently.
- In a separate small bowl, whisk together fresh orange juice, chicken sparkling grape juice vinegar, dijon mustard, honey, minced shallot, olive oil, salt, and pepper until well blended.
- Drizzle the dressing over the salad just before serving and toss gently to coat all ingredients evenly.
