Ingredients
- 1 large ripe mango
- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 2 tablespoons honey
- 1/2 teaspoon ground cumin
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon finely chopped chili pepper
- 2 tablespoons finely chopped cilantro
- 1/3 cup extra virgin olive oil
Instructions
- Blend together the mango, lime juice, orange juice, honey, cumin, garlic, and salt in a blender until smooth.
- Transfer to a medium jar and slowly add the olive oil while stirring continuously with a fork or whisk to emulsify the dressing.
- Mix in the chili pepper, cilantro, and black pepper. Taste and adjust seasoning if necessary.
- Store in an airtight container in the refrigerator for up to one week; shake well before serving.
