2 eggs
1/2 avocado, sliced
1/2 cup mushrooms, sliced
1 cup fresh spinach
1 tomato, halved
2 slices halloumi cheese
1 tbsp olive oil
Salt, pepper, chili flakes to taste
Fresh parsley for garnish (optional)
Instructions
In a non-stick frying pan over medium heat, add olive oil and fry the eggs sunny-side up until the whites are set but yolks remain runny. Season with salt and chili flakes.
In another pan, sauté the sliced mushrooms in olive oil over medium-high heat for about 5–7 minutes until golden brown; season with salt and pepper.
Add fresh spinach to the pan with mushrooms and sauté for an additional 1–2 minutes until wilted.
In a hot grill pan or skillet, sear the halved tomatoes and halloumi slices until golden and slightly charred—about 1–2 minutes per side.
Arrange all components beautifully on a plate and garnish with fresh parsley if desired.
