- 1 cup steamed broccoli florets
- 1 cup cooked basmati rice
- 1 cup grated carrots
- 1 tbsp chopped parsley or cilantro
- 1 tsp cumin or turmeric (optional)
- Olive oil or ghee for cooking
Instructions
- Heat olive oil in a non-stick skillet over medium heat. Crack in the eggs and fry sunny-side up until the whites are set and edges are crispy. Season with salt and pepper.
- In a separate pan, sauté grated carrots in olive oil or ghee until soft. Add cooked basmati rice, chopped herbs, and spices; stir until heated through.
- Steam broccoli for about 3-4 minutes until bright green and tender.
- Assemble the bowl by layering flavored rice at the bottom, then adding steamed broccoli, avocado slices, and finally topping with fried eggs.
