  • Salt and pepper to taste

Instructions

  1. In a bowl, mix spinach, ricotta, Parmesan, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
  2. Place flank steak on a cutting board and pound it gently to about 1/2 inch thick.
  3. Spread the stuffing mixture evenly over one side of the steak and roll tightly.
  4. Secure the roll with kitchen twine or toothpicks and season the outside with salt and pepper.
  5. Preheat the oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium-high heat and sear each side of the stuffed steak for about 3-4 minutes until browned.
