Ingredients
- 2 pounds flank steak
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon garlic powder
- Olive oil for searing
- Salt and pepper to taste
Instructions
- In a bowl, mix spinach, ricotta, Parmesan, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
- Place flank steak on a cutting board and pound it gently to about 1/2 inch thick.
- Spread the stuffing mixture evenly over one side of the steak and roll tightly.
- Secure the roll with kitchen twine or toothpicks and season the outside with salt and pepper.
- Preheat the oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium-high heat and sear each side of the stuffed steak for about 3-4 minutes until browned.
- Transfer to the oven and bake for 25-30 minutes or until desired doneness is achieved.
- Let rest for 10 minutes before slicing and serving.
