Instructions
- In a bowl, beat together cream cheese, sugar, and vanilla until smooth. Whip heavy cream until stiff peaks form and fold it gently into the cream cheese mixture.
- Mix diced strawberries with sugar and let them sit for 10 minutes to release juices.
- Combine crushed cookies with melted butter until it resembles wet sand.
- Lay a crepe flat, spread cheesecake filling over it, sprinkle cookie crust, add macerated strawberries, and roll tightly.
- Wrap each roll in plastic wrap and refrigerate for at least an hour before slicing into bite-sized pieces and dusting with powdered sugar.
