- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- ¾ cup strawberry jam or preserves
- Sprinkles (for decoration)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
- Cream softened butter with granulated and powdered sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Roll tablespoon-sized portions of dough into balls; flatten into discs. Create wells in half of the discs and fill with jam.
- Top each filled disc with another disc of dough; seal the edges using a fork.
- Bake for 10-12 minutes until lightly golden around the edges. Cool on wire racks.
