  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tablespoons butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries

Instructions

  1. In a small saucepan over medium heat, combine the sliced strawberries, sugar, lemon juice, and water. Stir continuously while cooking for about 5–7 minutes until the strawberries soften and release their juices.
  2. Stir in the cornstarch mixture into the saucepan. Continue cooking for an additional 1–2 minutes until it reaches a syrupy consistency. Remove from heat and set aside to cool.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another medium bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients. Gently stir until just combined. Remember not to overmix; it’s okay if there are a few lumps. Let the batter rest for about 10 minutes.
  5. While waiting for the batter to rest, hull and dice additional fresh strawberries. Spread them on paper towels to dry slightly before folding them gently into your pancake batter just before cooking.
