Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a small bowl, mix cream cheese with sugar, egg yolk, and vanilla extract until smooth.
- In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Beat eggs with milk and oil in a separate bowl; combine wet ingredients with dry ingredients until just mixed.
- Toss strawberries in flour and gently fold into the batter.
- Spoon batter into muffin cups halfway full; add cream cheese filling and top with remaining batter.
- Prepare crumb topping by mixing flour and sugar with melted butter until crumbly; sprinkle over muffins.
- Bake for 18-22 minutes until golden brown; cool before serving.
