- 2 cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp kosher salt
- 1 tsp ground cinnamon
- 8 tbsp butter
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 1 cup mashed bananas (about 2 bananas)
- ⅓ cup maple syrup
- 2 tsp vanilla extract
- 3 eggs
- ¾ cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C) and spray a baking dish (9x9x3” or 9x11x3”) with nonstick spray.
- In a large bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy (about 3 minutes). Mix in the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas until well combined.
- In another bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon together.
- Gradually add the dry mixture to the wet ingredients. Stir gently until just combined; avoid overmixing.
- Pour the batter into the prepared dish and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
- While baking, prepare the toffee sauce by melting butter and brown sugar together over medium-low heat; stir frequently for about 10 minutes. Add heavy cream and vanilla extract; cook an additional 5 minutes without boiling.
- After removing the cake from the oven, poke holes using a toothpick and pour cooled toffee sauce over it. Allow soaking for at least an hour before serving.
