  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish (9x9x3” or 9x11x3”) with nonstick spray.
  2. In a large bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy (about 3 minutes). Mix in the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas until well combined.
  3. In another bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon together.
  4. Gradually add the dry mixture to the wet ingredients. Stir gently until just combined; avoid overmixing.
  5. Pour the batter into the prepared dish and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  6. While baking, prepare the toffee sauce by melting butter and brown sugar together over medium-low heat; stir frequently for about 10 minutes. Add heavy cream and vanilla extract; cook an additional 5 minutes without boiling.
  7. After removing the cake from the oven, poke holes using a toothpick and pour cooled toffee sauce over it. Allow soaking for at least an hour before serving.
