Instructions
- Preheat your oven to 325°F (163°C) and prepare an 8×5 loaf pan by greasing it or lining with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In another bowl, mix the egg, sugar, and vegetable oil until combined.
- Gradually add the dry mixture to the wet ingredients and stir until just combined; the batter will be thick.
- Fold in buttermilk, vanilla extract, and mashed bananas until smooth.
- Pour batter into the prepared loaf pan and sprinkle walnuts on top.
- Bake for 60–75 minutes or until a knife inserted in the center comes out clean.
