- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- 2 teaspoons paprika
- 2 teaspoons cumin powder
- 2 teaspoons coriander powder
- 1 teaspoon cinnamon
Instructions
- Prepare the Marinade: In a bowl, combine paprika, cumin powder, coriander powder, and cinnamon. Add minced garlic, grated ginger, chopped onion, white vinegar, sugar, and 1 tablespoon of vegetable oil. Mix thoroughly.
- Marinate the Beef: Place cubed beef chuck in a large bowl and pour the marinade over it. Ensure all pieces are well-coated. Cover and let marinate for at least 1 hour (or overnight for maximum flavor).
- Cook the Beef Vindaloo: Heat the remaining vegetable oil in a large pot or Dutch oven over medium heat. Add the marinated beef along with its marinade and sauté for about 5 minutes until browned. Reduce heat to low, cover, and simmer for about 45 minutes to an hour until tender.
