  • 1 tbsp butter

  • 1 tbsp fresh dill (or parsley), chopped
  • 2-3 large eggs
  • ripe avocado, sliced
  • Pinch of salt

Instructions

  1. Cook the Potatoes: Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, chopped dill (or parsley), salt, and pepper.
  2. Prepare the Eggs: Boil eggs for 7 minutes for jammy yolks or 9 minutes for fully set yolks. Transfer to ice water, cool, peel, and slice in half.
  3. Cook the Salmon: Season the salmon with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the salmon for about 4-5 minutes per side until golden brown.
  4. Assemble: Plate your garlic herb potatoes next to the salmon. Add soft-boiled egg halves and avocado slices with a sprinkle of salt.
