Ingredients
- 1 salmon fillet (4-6 oz)
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 cup Brussels sprouts, halved
- 1 cup green beans
- 1 cup steamed broccoli
- Optional: squeeze of lemon juice, red pepper flakes
Instructions
- Preheat the oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet and roast for 20-25 minutes until crispy.
- Rub the salmon fillet with olive oil, smoked paprika, garlic powder, salt, and pepper. Heat a nonstick skillet over medium-high heat and sear the salmon for about 3-4 minutes on each side until cooked through.
- In another skillet, heat olive oil over medium heat and sauté green beans (add minced garlic if desired) for about 5-7 minutes until tender.
- Steam broccoli florets in a basket over boiling water for about 4-5 minutes until tender-crisp.
- Assemble by placing the salmon next to the roasted Brussels sprouts, sautéed green beans, and steamed broccoli in a bowl. Garnish with lemon juice or red pepper flakes if desired.
