Ingredients
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/3 cup molasses
- 2 1/4 cup all-purpose flour
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- 1-2 teaspoons ground ginger
- granulated sugar for rolling
- 1 tablespoon melted butter
- 1 tablespoon pure maple syrup
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
- pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- In a stand mixer, cream softened butter and granulated sugar until light and fluffy. Add egg and molasses; mix until well combined.
- In a separate bowl, whisk together all-purpose flour, baking soda, salt, and ground ginger. Gradually add to the butter mixture until a soft dough forms.
- Scoop dough into balls, roll in sugar, and place on a parchment-lined baking sheet.
- Bake for 9-11 minutes until edges are lightly golden; allow cooling briefly on the pan.
- For the glaze, whisk together melted butter, maple syrup, powdered sugar, milk, and pinch of salt until smooth. Dip cooled cookies in glaze and allow to set.
