Instructions
- Preheat your oven to 350°F (177°C) and prepare a muffin tin by greasing it lightly.
- In a large bowl, mix sugar with one overripe banana until smooth.
- Stir in melted butter, egg, and vanilla extract until well combined.
- Gently fold in flour, baking soda, and salt until just mixed; avoid over-mixing.
- Mash the second banana on a plate and fold it into the batter.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
