- 2 lbs beef chuck roast
- 2 medium sweet onions
- 4 garlic cloves

- 1 lb Yukon gold potatoes (optional)
- 3 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
Instructions
- Cut the beef chuck roast into 2-inch cubes.
- Chop the sweet onions and mince the garlic.
- (Optional) Sear the beef in a skillet until browned on all sides for added flavor.
- Place beef in the slow cooker with chopped onions, minced garlic, sliced carrots, and diced potatoes (if using). Add thyme, Worcestershire sauce, and enough beef broth to cover everything.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Adjust seasoning before serving; thicken gravy if desired using a cornstarch slurry.
