Ingredients
- 2 lbs beef chuck, cut into 1.5-inch cubes
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp red curry paste
- 1 tbsp curry powder
- 2 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Prepare all ingredients by chopping the onion, mincing garlic, grating ginger, and cutting beef into cubes.
- In a pan over medium heat, sauté the onion until translucent. Add garlic and ginger until fragrant.
- Transfer aromatics to a slow cooker with beef cubes, coconut milk, beef broth, red curry paste, curry powder, salt, pepper, and lime juice.
- Cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
- Adjust seasoning if needed before serving hot over rice with garlic naan on the side.
