Ingredients
- 2 lbs beef chuck
- 2 tbsp vegetable or coconut oil
- 1 large onion
- 3 cloves garlic
- 1 tbsp fresh ginger
- 2 tbsp curry paste
- 1 can (14 oz) coconut milk
- 2 tbsp tomato paste
- Fresh cilantro (for garnish)
Instructions
- Prepare all ingredients by chopping the onion, mincing the garlic, and grating the ginger.
- In a pan over medium heat, sauté chopped onion in oil until translucent. Add minced garlic and ginger; cook until fragrant.
- Transfer the sautéed mixture to the slow cooker. Add cubed beef, curry paste, coconut milk, tomato paste, and seasonings. Stir well.
- Set the slow cooker on low heat and cook for 6-8 hours until the beef is tender.
- Taste and adjust seasoning before serving hot with fresh cilantro on top.
