Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 325°F (160°C).
- In a Dutch oven over medium-high heat, add olive oil and brown the beef for about 5-7 minutes.
- Add onion, garlic, carrots, and celery; sauté for about 5 minutes until softened.
- Stir in diced tomatoes, beef broth, tomato paste, and herbs; mix well.
- Cover and bake for 2-2.5 hours until the beef is fork-tender.
- Let rest for a few minutes before serving.
