Ingredients
- 3 eggs
- 1 ⅛ cups sugar
- 2 cups all-purpose flour
- 2 ½ tsp baking powder
- ⅓ cup butter (softened)
- ⅓ cup Greek yogurt (plain)
- 1 large orange (cut into pieces)
- 2 ½ oz orange juice (freshly squeezed)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, blend the orange pieces (with rind) until smooth. Set aside.
- In a mixing bowl, beat eggs and sugar until light and fluffy. Add blended orange mixture, Greek yogurt, and softened butter; mix until combined.
- In another bowl, whisk flour and baking powder together. Gradually add to wet mixture until just combined.
- Pour batter into a greased 9-inch round cake pan and bake for about 55 minutes or until a toothpick comes out clean.
- Mix sugar with freshly squeezed orange juice in a small bowl to create syrup.
- Once the cake has cooled slightly, pour the orange syrup over it while still warm.
