  • 2 eggs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper, to taste
  • 1 cup tomato sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the olive oil with chopped onion, bell pepper, and celery until soft (5-7 minutes). Add minced garlic and cook for an additional minute.
  3. In a large bowl, mix ground beef with sautéed vegetables, breadcrumbs, grated Parmesan cheese, eggs, herbs, salt, and pepper until just combined.
  4. Shape the mixture into a loaf on a baking sheet lined with parchment paper or in a greased loaf pan. Spread half of the tomato sauce over the top.
  5. Bake for 1 hour or until the internal temperature reaches 160°F (71°C). Let it rest for 10-15 minutes before slicing.
