Ingredients
- 2 eggs
- 1 tsp butter or olive oil
- Salt & pepper to taste
- 1 avocado
- ½ cup blueberries
- ½ cup raspberries
- 1 orange, sliced into wedges
Instructions
- In a bowl, whisk the eggs with salt and pepper. Heat the butter or olive oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet, stirring gently until soft and fluffy.
- While the eggs cook, halve and slice the avocado and arrange the berries and orange on a serving plate.
- Once cooked, place scrambled eggs in the center of the plate and surround them with prepared fruit.
