- 1 cup whole milk
- 1/4 cup olive oil
- 2 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup pitted olives (green or black)
- Fresh thyme leaves (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×5 inch loaf pan.
- In a mixing bowl, whisk together flour, baking powder, salt, black pepper, and cayenne pepper (if using).
- In another bowl, combine milk, olive oil, and eggs until well mixed.
- Pour wet ingredients into dry ingredients; stir gently to combine without overmixing.
- Fold in shredded cheese, olives, and thyme if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes until a skewer inserted comes out clean.
- Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely before slicing.
