Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup diced tomatoes
- Fresh basil for garnish
Instructions
- In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
- Form the mixture into small meatballs about 1 inch in diameter.
- Heat olive oil in a pot over medium heat; brown the meatballs for about 5 minutes.
- Remove meatballs and sauté chopped onions until translucent (3–4 minutes).
- Pour in chicken broth; bring to boil then reduce to simmer.
- Return meatballs and simmer for about 15 minutes.
- Stir in heavy cream and fresh spinach; cook until spinach wilts (about 2 minutes).
- Serve hot, garnished with fresh basil.
