- 2 large sweet potatoes

- 1 cup feta cheese (or goat cheese)
- 2 tablespoons honey (or maple syrup)
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, slicing them into 1/4-inch rounds.
- In a mixing bowl, combine olive oil, salt, black pepper, and toss the sweet potato rounds until well coated.
- Line a baking sheet with parchment paper and arrange the rounds in a single layer. Roast for about 30 minutes or until tender and slightly caramelized.
- Remove from the oven, sprinkle crumbled feta over each round, and drizzle with honey while warm.
- Garnish with freshly chopped parsley before serving.
