- 1 pint fresh strawberries, hulled and sliced
- 1 tablespoon honey (plus extra for drizzling)
- 1 teaspoon balsamic vinegar
- Pinch of salt
- 1 cup ricotta cheese
- 1/2 teaspoon vanilla extract
- 4 slices of crusty bread, toasted
- Fresh thyme or basil leaves (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Toss sliced strawberries with honey, balsamic vinegar, and salt in a bowl. Spread them evenly on the prepared baking sheet.
- Roast for 20-25 minutes until soft and caramelized; let cool.
- In a mixing bowl, combine ricotta cheese, honey, and vanilla extract. Whip until smooth and creamy.
- Assemble by spreading whipped ricotta on toasted bread, topping with roasted strawberries, garnishing with herbs if desired, and drizzling with extra honey.
