  • 2 cups cherries (washed, pitted, and cut in half)
  • 1 1/3 cup white granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and spread halved cherries on it. Lightly sprinkle with sugar and roast for about 10 minutes until softened. Allow to cool.
  2. Lower oven temperature to 325°F and prepare an 8×8 baking pan by spraying with non-stick spray and lining with parchment paper.
  3. In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In another bowl, beat together sugar, eggs, and egg yolk until light and fluffy. Slowly add melted butter, oil, and vanilla extract while mixing on low speed.
  5. Fold in dry ingredients gently until just combined. Incorporate half of the roasted cherries and chocolate chips into the batter.
  6. Pour the mixture into the prepared pan and bake for 40-50 minutes until edges are set but center remains slightly underbaked.
  7. Cool completely in the pan before slicing into squares and topping with remaining roasted cherries.
