Ingredients
- 2 cups cherries (washed, pitted, and cut in half)
- 1 1/3 cup white granulated sugar
- 2 large eggs
- 1 egg yolk
- 5 tablespoons unsalted butter (melted)
- 1/3 cup canola or vegetable oil
- 1 teaspoon pure vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper and spread halved cherries on it. Lightly sprinkle with sugar and roast for about 10 minutes until softened. Allow to cool.
- Lower oven temperature to 325°F and prepare an 8×8 baking pan by spraying with non-stick spray and lining with parchment paper.
- In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
- In another bowl, beat together sugar, eggs, and egg yolk until light and fluffy. Slowly add melted butter, oil, and vanilla extract while mixing on low speed.
- Fold in dry ingredients gently until just combined. Incorporate half of the roasted cherries and chocolate chips into the batter.
- Pour the mixture into the prepared pan and bake for 40-50 minutes until edges are set but center remains slightly underbaked.
- Cool completely in the pan before slicing into squares and topping with remaining roasted cherries.
