  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic (minced)
  • 8 whole garlic cloves (peeled)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the lamb shoulder dry and season generously with salt and pepper.
  3. In a bowl, mix honey, soy sauce, and minced garlic until well combined.
  4. Place the lamb in a roasting pan; pour half the glaze over it and scatter the whole garlic cloves around.
  5. Roast for 2 to 2.5 hours, basting occasionally with remaining glaze until internal temperature reaches 145°F (63°C).
  6. Let it rest for 15 minutes before slicing.
