Ingredients
- 3 lb bone-in lamb shoulder
- Salt & freshly ground black pepper
- 1/4 cup honey
- 3 tbsp soy sauce
- 4 cloves garlic (minced)
- 8 whole garlic cloves (peeled)
Instructions
- Preheat your oven to 325°F (165°C).
- Pat the lamb shoulder dry and season generously with salt and pepper.
- In a bowl, mix honey, soy sauce, and minced garlic until well combined.
- Place the lamb in a roasting pan; pour half the glaze over it and scatter the whole garlic cloves around.
- Roast for 2 to 2.5 hours, basting occasionally with remaining glaze until internal temperature reaches 145°F (63°C).
- Let it rest for 15 minutes before slicing.
