Ingredients
- 2 ½ cups dry macaroni noodles (cooked according to directions, drained)
- 1 cup diced turkey or chicken (as an alternative to corned beef)
- 1 cup cubed Swiss cheese
- 1 cup drained sauerkraut
- 1 cup diced dill pickles
- ¾ cups thousand island dressing
- ½ cup mayonnaise
- 1 tablespoon dijon mustard
- 1 tablespoon sauerkraut brine from the jar
- Optional: salt and pepper (to taste)
Instructions
- Cook the macaroni noodles according to package directions; drain and rinse under cool water until cooled.
- In a small bowl, whisk together thousand island dressing, mayonnaise, mustard, and sauerkraut brine.
- In a large serving bowl, combine cooled pasta, dressing mixture, turkey or chicken, Swiss cheese, sauerkraut, and dill pickles.
- Chill for at least one hour before serving. Adjust seasoning with salt and pepper if desired.
