Ingredients
- 4 cups fresh celery, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop the celery into bite-sized pieces. In a large mixing bowl, combine chopped celery with halved cherry tomatoes and diced cucumber. Finely chop the red onion and add to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the vegetable mixture and toss gently to coat evenly. Serve immediately or chill for about 30 minutes before serving.
