- 1 cup unsalted butter (room temperature)
- 1½ cups light brown sugar (packed)
- ½ cup creamy peanut butter
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup peanut butter chips
- 2 cups Reese's pieces
Instructions
- Preheat your oven to 400°F and line two baking sheets with parchment paper.
- In a stand mixer, cream together the butter, brown sugar, and peanut butter until light and fluffy.
- Add the vanilla extract and eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually incorporate into the wet mixture until just combined.
- Gently fold in peanut butter chips and Reese's pieces.
- Chill the dough for about 15 minutes.
- Scoop dough onto prepared sheets, spacing about 3 inches apart and flattening slightly.
- Bake for 8-10 minutes until edges are set and centers are still gooey.
- Allow cookies to cool on sheets for at least 30 minutes before serving.
