Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon fine salt
- 1 tablespoon unsweetened cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk (room temperature)
- 2 large eggs (room temperature)
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 cup unsalted butter, softened
- 12 oz cream cheese, softened
- 5-6 cups powdered sugar, sifted
- 2 teaspoons vanilla extract
- Pinch of salt
- 1-2 tablespoons heavy cream (optional for fluffier texture)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two or three cake pans and line with parchment paper.
- In one bowl, sift together flour, baking soda, salt, and cocoa powder. In another bowl, whisk together oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.
- Gradually combine wet and dry mixtures until smooth—avoid overmixing.
- Divide batter between prepared pans and bake for 28-35 minutes until a toothpick comes out clean. Let cool.
- Prepare the cream cheese frosting by beating softened butter and cream cheese until creamy. Gradually add powdered sugar and vanilla extract until fluffy.
- Assemble the cooled cake layers with frosting in between each layer, apply a crumb coat, then frost the outer layer as desired.
