  • 1 1/2 cups packed light brown sugar
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon kosher salt
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
  • 1/2 cup unsalted butter, melted
  • 1 cup white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/2 teaspoon white vinegar
  • 2 large eggs
  • 1/8 teaspoon kosher salt
  • 3/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with cooking spray.
  3. For the chocolate chip cookie layer, cream together room temperature butter, brown sugar, and white sugar until fluffy. Add vanilla extract and salt, then beat in eggs one at a time. Gradually mix in flour and baking powder before folding in chocolate chips.
  4. For the red velvet layer, mix melted butter with white sugar until well blended. Stir in cocoa powder, vanilla extract, red food coloring, vinegar, eggs, and salt until smooth. Gradually mix in flour until fully combined.
  5. Pour half of the cookie dough into the prepared pan and spread evenly. Pour the red velvet batter over it followed by dollops of remaining cookie dough.
  6. Bake for about 30 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool completely before slicing into squares.
